Yield: Serves 4
4 | pieces | boneless, skinless chicken breasts | |

2 to | 3 teaspoons | (a few good splashes) balsamic vinegar | |

8 | slices | firm tomato | |
|
|||
8 | slices | fresh basil | |
|
|||
8 | slices | fresh mozzarella or fresh smoked mozzarella | |
|
|||
Extra virgin olive oil | |||
|
|||
Cracked black pepper to taste | |||
|
|||
Sea salt, to taste | |||
|
Heat grill to medium high heat. Rub chicken with balsamic vinegar to tenderize. Grill chicken breasts for 6 minutes on each side or until juices run clear. Remove chicken from grill and allow to stand for 5 minutes to reach room temperature.
Top each breast with a layer of tomato, basil, and mozzarella, using 2 pieces of each. Drizzle the entire dish with olive oil and top with black pepper and salt, to taste. Serve with crusty Artisan bread.
