1 | container | (15 oz.) ricotta cheese | |

1/4 | cup | Parmesan cheese, grated | |

2 | large tomatoes, cut into thin wedges | ||

2 | tablespoons | olive oil | |
|
|||
1/2 | teaspoon | salt | |

1 | pkg. | (16 oz.) Rotini pasta | |

2 | tablespoons | fresh basil leaves, slivered | |
|
Whisk ricotta, Parmesan and pepper to taste in large serving bowl. In separate bowl, combine tomatoes, olive oil and salt.
Cook pasta according to package directions. Remove 1/4 c. cooking water and stir into ricotta mixture. Drain pasta; add to ricotta mixture with tomatoes and basil; mix well and serve at once.
